    MAUD’S TAMARIND FISH CURRY

    FOR RUDY AND JERUSHA

     

    INGREDIENTS

    About 6 pieces of firm fish

    3-4 big tomatoes grated/canned tomatoes optional

    2 med onions  diced

    Half cake of fresh tamarind

    Tbs curry powder – 1 tsp ginger and garlic

    Som and mustard seeds

    Curry leaves and dhania

    METHOD

    Strain tamarind through a colander with hot water and collect the strained water in bowl

    Braise onions, som and mustard seeds in hot oil

    Add curry powder

    Add tomatoes, ginger and garlic, salt and curry leaves

    Add strained tamarind water to tomato mixture

    Simmer for a few min before adding fish cutlets

    Simmer on low heat until fish is cooked

    Sprinkle with dhania before serving
