    MAUD’S FAMOUS CHICKEN CURRY

    FOR TRACY AND KELSEY

        

    INGREDIENTS

    1 whole chicken or chicken pieces.

    1 ONION

    3 Med. Tomatoes

    1 Tblsp. Ginger + garlic

    6 Cardamon.

    6 Cloves.

    3 Stick Cinnammon.

    2 Star Aniseed.

    Salt

    Curry leaves

    Dhania

    Curry powder to specific taste

    3-4 Potatoes cut into halves

    METHOD

    Cut chicken into pieces +wash + drain  thoroughly

    Add cardamon,cloves, stick cinnamon and aniseed to hot oil

    Add onion and braise until golden brown – Add curry powder

    Add grated tomato, curry leaves, salt, ginger and garlic

    Simmer until gravy thickens for a few min

    Add well drained chicken

    Cook on high temp for about 2 min, then add potatoes and lower heat to medium heat

    Curry is cooked when potatoes are soft

    Sprinkle dhania before serving!
